Chilcas Chardonnay 2004 - The Casablanca Valley west of Chile's capital, Santiago, creates a natural funnel for the maritime breezes of the Pacific, drawing in cool air and fog, which has made the valley the best place in Chile to grow refreshing white wines. The coolness preserves the grapes' acidity while they slowly develop their rich flavors. You'll find lots of fruit flavors in the Chilcas Ranch Chardonnay, especially melon, lime, and fig, all lightly framed by a touch of clove from some oak-aging. It's full-bodied, with a pleasing, dry finish. Serve with chicken or white fish such as halibut or sea bass. Unlike many Chards, it's also refreshing as a good aperitif and won't weigh you down before dinner.

Dancing River Chardonnay 2006 - Some grapes like extremes, others like Chardonnay...not so much. It can take heat during the day, as long as it has a chance to cool off at night - fog, high elevations, cooling breezes can all do the trick. It's these kinds of conditions that ripened the grapes in the Dancing River Chardonnay, making it rich but not flabby, aromatic but focused. It gracefully layers tropical fruit notes of pineapple and mango with tarter notes of quince and pear. Then oak-aging steps in to soften the mouthfeel and add a touch of vanilla, a contrast to highlight the fruit. The Dancing River Chardonnay is a versatile wine, great with a variety of seafood - from lobster, to halibut - as well as many pastas, especially fresh preparations like pesto and primavera. Goat cheeses and Brie pairs well.

Red Lava Syrah Reserve 2004 - Red soils, red wine; the iron rich earth of Red Lava Vineyards could be from a Mars probe photo, if it weren’t for the rows of Syrah vines. The lava doesn’t hold water well, so the vines dig deep for sustenance, and that makes for intensity and richness in the wines. As an added bonus the entire vineyard slopes toward the sun in the south, soaking up energy to ripen the grapes. In the end, it makes a full-bodied wine with complex aromas of blackberry, blueberry, pepper, slate, and cedar. The fruit notes dominate on the palate, which is lush and round, with good length. Serve the Red Lava Reserve Syrah with cheesesteak sandwiches, burgers, or other grilled meats – sausages, barbecued chicken, or even ribs. If you prefer cheese, look for smoked Gouda, Manchego, or Provolone.

Santome Moro '41, Rosso 2005 - Veneto, the area around Venice – has always had a variety of red wines, ranging from powerful Amarones to light, refreshing Valpolicellas and Bardolinos. The Moro ’41 tends toward the latter, but with a firm, smooth character that stands out from many of its neighbors. Medium-bodied, it’s got plum, mulberry, milk chocolate, and licorice aromas; the tannins are light and smooth. The Moro ’41 makes a great red for fish; its smooth, lighter character suits fish like snapper and seabass. It also pairs well with light chicken dishes.

Senorio del Aguila Reserva 2000 - Cariñena is a confusing word in the world of Spanish wine, being both the name of a region and a grape (known as Carignan in France). This wine is a case of the former: a blend of Grenache, Tempranillo, and Cabernet Sauvignon, from the northern part of Spain, southeast of Rioja. Like many of Spain’s less-familiar wine regions, in the past couple of decades Cariñena has made the jump from high-alcohol bulk wines, to more flavorful, balanced products. The Señorio del Aguila Reserva shows what can be accomplished; no big, flabby monster, it shows a great mix of fruits – mulberry, blackberry, raspberry, black plum – touched by some licorice and wild herb notes. It’s medium to full-bodied, with firm tannins and good length. The Señorio del Aguila Reserva’s tannins practically beg for meat; lamb and beef in particular will pair very well. Or try some Spanish cheese, something creamy or even a blue; look for Cabrales, Valdeon, Idiazabal, or the smooth, rich Torta de la Serena.

Stallion Cellars Pinot Noir 2005 - The floor of Napa Valley is, by-and-large, a bit too warm for Pinot Noir, which favors cooler growing areas. However, there are nooks and crannies around the valley where wind, fog drifting up from the San Francisco Bay, or north-facing slopes can put enough of a chill on things to make this picky grape happy. When that happens, you get a Pinot like this: dark fruit notes like plum, blackberry, and black raspberry, with some spicy touches of cedar and clove. It's full-bodied, but keeps that firm mouthfeel so typical to classic Pinot. That mouthfeel makes the Stallion Cellars Pinot Noir very flexible at the table; it's perfect for all sorts of medium-weight dishes, from fish like wild salmon or tuna to chicken, pork, or Portabello mushrooms.
